Apple Fennel Cinnamon Breakfast Hash

My husband was a hard convert over to paleo. Unlike me, he has never suffered from any digestive issues and he is always in great shape. He’s a farmer which means he’s super active and doesn’t have to worry about his weight. He is also almost never hungry – skipping meals because he “forgot to eat”. Breaking him of his breakfast cereal too years. He isn’t a huge egg fan, so I have to get creative with egg free options for him. His favorite breakfast is when I make a hash with meat and tons of vegetables. I usually use whatever meat and vegetables we have on hand and he happily gulps it down. Today, I came up with a complete winning combination. The apple and cinnamon go great with the fennel and apple. If you don’t have fennel, just use celery, and feel free to substitute ground pork for the turkey.

Ingredients
  • Ingredients:
  • 1 tsp coconut oil
  • 1 pound ground turkey
  • 1 bulb fennel, diced
  • ½ yellow onion, diced
  • 1 green apple, peeled and diced
  • 2 tsp ground cinnamon (more if you want the flavor more intense)
  • 1 big handful flat leaf parsley, chopped
  • sea salt and black pepper to taste
Instructions

  2. In a large skillet, heat the coconut oil until it shimmers. Add the turkey and break it up with a spatula. Cook until the turkey is no longer pink. Next, add the fennel, onion, apple and cinnamon. Saute for about 15 minutes or until the fennel and onion are tender. Remove from heat and add the parsley. Season with salt and pepper to taste.
Notes
Tip: double this recipe for a week of delicious breakfasts, though I've been known to eat hash for lunch and dinner, too!

  2. If you want to spend less time just poke holes in the spaghetti squash with a fork and then cook it in the microwave. I haven’t done one in awhile but I want to say it usually takes about 20 mins. Start with 10-15 mins and check it frequently and once you can stick a fork into it easily or press it and it’s soft (with an oven mitt on!!!) it’s done. Let it cool, then cut and scoop everything out!
